Gluten Free Breakfast Deliciousness

A dear friend of mine is trying to cut gluten out of my life. Several months back I wrote an article for the local paper in my Kitchen Wisdom column about making the switch to a gluten free life. It ain’t easy, but there really are some great options out there these days. Unfortunately,  I am still on the lookout for a decent GF pasta, if anyone has a brand or a recipe, please pass it along.

In the meantime, here is a GF pancake recipe that I developed when Jeff and I got back from Italy and needed a bit of gluten free detoxing. The pancakes are thin and delicate and make the perfect canvas for your favorite toppings.

  • 1 c white rice flour
  • 1-2 Tbs sugar
  • 2 tsp baking powder or arrowroot powder
  • 1/2 tsp salt
  • 1 large/2 small eggs, beaten
  • 3/4 c plain yogurt
  • 1/4 c water
  • 2 tsp canola/vegetable oil, plus extra for pan
Mix dry ingredients. add egg, yogurt, water and oil. Cook in a pan with a little oil. Serve with syrup, almond butter, more yogurt, etc.
