bulgar salad…so good the camera missed it

yesterday i was making my veggie burgers, which deserve a whole post to themselves…and wanted to make a simple salad to go with them. problem is, as much as i love the lettuce from my garden, i get bored eating straight up greens and dressing. then i remembered a recent podcast that i had been listening to.
on my commute to nora’s fish creek inn in wilson i like to listen to various podcasts and books on tape. usually it is this american life. last week i finished up barbara kingsolver’s animal vegetable miracle. this week i listened to lynn rosetta casper on the splendid table. this radio show is dedicated to all things food, from recipes to stories to restaurant reviews. lynn suggested adding grains to your salad to give it a nice chew. i thought this sounded like a good idea and looked into my grain drawer to see what i had laying around.
low and behold i had a container of bulgar that i don’t think i have messed with in a LONG time. sounded like a good idea so i gave it a shot.
i “cooked” up the bulgar, adding boiling water to the grain and letting it sit for 30 minutes. meanwhile i whipped up a vinaigrette. after 30 minutes i drained the remaining water from the bulgar and tossed it with the greens and dressing in a bowl. i had an avocado laying around so i smooshed that in with the salad.
oh my god! this salad was the most delightful salad i had eaten in ages. it was chewy and crispy, rich and creamy…in a word it felt decadent. even jeff said that he would go vegetarian in his meals were this good. unfortunately i didn’t take a picture of it. you are just going to have to trust my words and try it for yourself.

bulgar lettuce salad

1/2 c bulgar
1 1/4 c boiling water

pour water over bulgar and let sit 30 minutes. drain any remaining water.

1 tbs sherry vinegar
1 tbs balsamic vinegar
2 tsp dijon mustard
1/4 c olive oil
1 clove garlic, minced
1 tbs minced shallot

whisk together vinegars, mustard, shallot and garlic. while whisking, slowly drizzle in olive oil. season with salt and pepper.

toss bulgar, lettuce and vinaigrette together in a bowl and enjoy.
